Orange & Poppy Seed Cake with Citrus Syrup

Pre-heat oven to 180°C. Line a 24 cm spring form tin with silicon paper.

For the Cake

Using an electric mixer, blend the Orange Cake Mix, eggs, water and poppy seeds together on low speed for 1 minute. Scrape down the sides of the bowl.

Beat for a further 5 minutes on medium, then a further 1 minute. Pour mixture into the prepared tin.

Cook for 25 -30 minutes or until the cake tests cooked in the centre.

For the Syrup

1.
Combine the ingredients for the syrup and simmer until the sugar dissolves and thickens slightly.
2.
Pour ½ the syrup over the cake when it comes out of the oven. Cool in the tin before turning out.

To Serve

1.
Cut into 12 even pieces. Place a portion of cake on a plate and drizzle over more syrup. Dust with icing sugar and serve with a quenelle of double cream.
