Peach and Coconut Muffins with Passionfruit Center
Method:
Print Recipe
1.
Combine muffin mix and water in a bowl and mix on a low speed for 1 minute, then on high for 3 minutes
2.
Warm passion fruit pulp in a saucepan, blend corn flour and water into a slurry and thicken pulp
3.
Divide half the mixture into 12 patty pan lined muffin tins, spoon over with thickened pulp
4.
Place half the diced peach over each and fill with remaining muffin mix
5.
Top with remaining peach, sprinkle with coconut and bake at 190ºc for 35 minutes
6.
Allow to cool on a wire rack, dust with icing sugar and serve
