Pear & Hazelnut Mousse Slice (Gluten Free)

Line a lamington tray with silicon paper.

For the Base

Melt the chocolate and butter together. Set aside. Using an electric mixer, whisk the egg whites until stiff, add the sugar gradually until thick and glossy. Fold meringue and hazelnuts into melted chocolate mixture. Spread this over the base of the prepared tin and place into the fridge to set.

For the Pears

Bring the sugar, vanilla pod and water to the boil until the sugar dissolves. Reduce syrup to a low simmer and cook the pear pieces until soft (3-7 min depending on the ripeness of the pear). Remove from syrup and drain in a colander.
For the Mousse
Place Hazelnut Mousse Mix and cold milk into a mixing bowl. Using an electric mixer, whisk on medium for 1 minute until combined.
Whisk for a further 6 min on high, scraping down the sides of the bowl occasionally.
Arrange cooled pear pieces onto the chilled chocolate base. Pour mousse on top of the pears, smoothing the top. Place in the fridge for approx 1 hour.

To Serve

Remove slice from tin. Portion slice into 12 even rectangle pieces. Dust with cocoa powder and pipe a rosette of whipped cream on top. Place a roasted hazelnut in the centre of the rosette.
