Roast Chicken with Steamed Greens & Gravy

Preheat oven to 200c, cut lemon and onion in half and pack into cavity of the chickens with the garlic and sage
2.
Rub with olive oil, then sprinkle over paprika, salt and pepper, place in the oven and cook for 10 minutes, then drop the oven temperature to 180c, and cook for a further 1 hour
3.
Peel root vegetables and cut into even sized chunks or wedges, toss with olive oil, salt, pepper and roast for 30 minutes

Once chicken is cooked, and juices run clear, remove from oven and allow to rest for 5 minutes

Combine gravy mix with cold water and mix until free from lumps, bring to boil, stir constantly, once boiled, reduce the heat and simmer for 2 minutes, stir occasionally
6.
For the greens, cut into desired shapes and cook in steamer till tender
7.
Carve chicken, and evenly plate up each dish, serve with roasted root vegetables and steamed greens.
8.
Generously smother chicken with gravy and serve.
