Roast Fillet Beef, Spinach, Soubise

Soubise

1.
Melt the butter in a saucepan over low heat.

Add the slices onions and spinach until most of he liquid has evaporated. Be careful not to brown. You want them to stay as white the onions and clear as possible.

Add heavy cream and warm through.

Salt to taste

Blend the onion and cream together. Pass through a fine strainer to make the sauce even more velvety.

Steaks

1.
Season the steaks, then heat the remaining butter in the skillet, still over a meat heat, and cook them for about 3 minutes on each side, until medium-rare. Loosely cover with foil and allow to rest in a warm place.
