Tender Braised Beef Ragu with Pappardelle Pasta

In a large hot pan, brown beef, once brown, remove from pan and deglaze with wine to help get the flavour and remove the sediment from the bottom, set aside

In a large pot sauté onion in a little oil, then add garlic and continue sautéing, add tomato paste and lightly roast until a rich colour is achieved

Combine 2L Majestic Beef Booster mix with 2L of boiling water, stir until dissolved.

Add tinned tomatoes and beef return to the boil, then reduce to a simmer cook for approximately 2 hours until meat is tender
5.
Once meat is cooked, remove from stock and allow to cool enough to touch, and finely shred meat, removing any fat or sinew, puree sauce till smooth
6.
In another pot sauté onion and garlic, add puréed sauce and cook down until thick enough to coat the pasta, fold in shredded meat and chopped parsley and season to taste with salt and pepper
7.
In boiling salted water cook pasta, once cooked drain off water, return to pot and coat with half the ragu
8.
To serve place pasta into serving bowls, top with additional ragu and shaved parmesan cheese.
