Pancake Pizza

Ingredients

  • 250g Edlyn Buttermilk Pancake Mix
  • 225ml Cold Water
  • Assorted Toppings (fresh fruit, nuts, Nutella, melted chocolate, coconut)

Method

Add Buttermilk Pancake mix and cold water to mixing bowl.

Mix on low speed for 1 minute, when finished be sure to scrape down the sides of the bowl

Brush a small amount of vegetable oil into pan

Cook on medium heat, pour pancake mix onto the pan, you can then spread the mix out a bit to thin it out so your pancake pizza base is not too thick. Flip over after 1 minute or when golden brown and cook other side.

When complete, decide upon your topping creation.

Tip - use a peanut butter, mascarpone or Nutella as your base spread and then let your imagination run wild.
