Savoury Muffins with Cream Cheese & Smoked Salmon

Ingredients

  • 310g Edlyn Savoury Muffin Mix
  • 192g Water
  • 80g Onion (diced, small)
  • 90g Cheese (grated)
  • 16g Chives (chopped)
  • 110g Cream cheese (mixed with finely diced onion and chives)
  • 80g Smoked Salmon

Method

  • Add water to mixing bowl and then add the Muffin Mix.
  • Using a paddle, mix on low speed (1st) for 1 minute. Scrape bowl.
  • Mix on medium speed for 3 minutes.

  • Take Edlyn Savoury Muffin Mix base and place in a mixing bowl. Take onion, cheese, chives and mix using a spatula.
  • Grease and line with silicon paper round tin (500g) and place 200g of mix into 2 tins, just over half (you will have some left over)
  • Preheat oven (rational) to 175c fan speed 1 place tin on the very bottom shelf of oven.
  • Cook for 35-40 mins. Turning half way. Check doneness with a skewer. Cool on a wire rack.
  • Once cooled, trim tops, and slice into 2" slices for each.
  • Spread with cream cheese and top with smoked salmon.
