Savoury Muffins with Cream Cheese & Smoked Salmon

Ingredients
- 310g Edlyn Savoury Muffin Mix
- 192g Water
- 80g Onion (diced, small)
- 90g Cheese (grated)
- 16g Chives(chopped)
- 110g Cream cheese (mixed with finely diced onion and chives)
- 80g Smoked Salmon

Mixing Instructions:
- Add water to mixing bowl and then add the Muffin Mix.
- Using a paddle, mix on low speed (1st) for 1 minute. Scrape bowl.
- Mix on medium speed for 3 minutes.

Cooking Instructions:
- Take Edlyn Savoury Muffin Mix base and place in a mixing bowl. Take onion, cheese, chives and mix using a spatula.
- Grease and line with silicon paper round tin (500g) and place 200g of mix into 2 tins, just over half (you will have some left over)
- Preheat oven (rational) to 175c fan speed 1 place tin on the very bottom shelf of oven.
- Cook for 35-40 mins. Turning half way. Check doneness with a skewer. Cool on a wire rack.
- Once cooled, trim tops, and slice into 2" slices for each.
- Spread with cream cheese and top with smoked salmon.
