Chilled Vanilla Pudding with Strawberry Compote

For the Pudding

Pour cold milk into mixing bowl, sprinkle in Edlyn Instant Vanilla Pudding Mix, and mix on low for 2 minutes

Scrape down bowl and mix on high for 2 minutes until smooth, once thick evenly pour into chilled serving glasses and refrigerate for 30 minutes.

For Strawberry Compote

1.
Place strawberries, sugar and port wine into a heated pot and bring to a boil, reduce to a simmer and cook for 2 minutes

Add water and half the strawberries, cook for an additional 3 minutes

Mix corn flour with a small amount of water to create a thin mixture, and slowly pour into berry compote and return to the boil until mixture thickens
4.
Remove from heat, fold through remaining strawberries and allow to cool
5.
To serve, pour strawberry compote over pudding and serve.
