Pancake Brekkie Burger
Ingredients
- 125g Beef Patty
- 100g Spinach Leaves
- 6x Rashes of Bacon
- 3x Eggs
- 300g Wood's Tomato Relish
- 250g Edlyn Buttermilk Pancake Mix
- 225ml Cold Water
Method
Add Buttermilk Pancake mix and cold water to mixing bowl.
Mix on low speed for 1 minute, when finished be sure to scrape down the sides of the bowl
Preheat a frying pan on high heat and portion out pancake mix into pan, ensuring the size and depth of pancake is what you require for your brekkie burger
Be sure to flip pancake over and cook until lightly brown on each side.
Preheat grill or seperate frypan again on high heat and lightly oil, place beef patty on heat
Cook beef patty to desired liking
Clean the grill or frypan and begin to cook your egg as you like it, we recommend sunny side up for visual appeal and also add rashes of bacon and cook through.
Construct brekkie burger using one pancake as bottom bun and add spinach leaves, then 1 - 2 rashes of bacon (depending on size), then place beef patty on top.
To finish, top the beef patty with your egg, a dollop of tomato relish and then finish by adding the other pancake to the top sealing in your burger (be sure not to use too much relish so not to make it soak through the pancake).
